A delicious combination of brightness from the lemon with the comfort of the orzo makes this soup a winner! Filled with bits of seitan in place of chicken this soup is great for weekday dinners and lunch. Enjoy with some pita bread and enjoy!
This was another one of my favorite soups growing up. We would always get it at local Greek restaurants and it was so good. This is filled with a lot of lemon and citrus, which I personally love. The tanginess of the soup pairs well with a bit of saltiness. This soup is simple it is only a few ingredients but that is what makes it so good. It is full of flavor with minimal ingredients.
Orzo is basically just little bits of pasta. They somewhat resemble rice. You can easily find it in most grocery stores or online. Otherwise, feel free to throw a different pasta shape in there or you can even use rice as well. You can also add in extra vegetables you like, throw some spinach in there for adding in extra greens. But I really just wanted to keep this dish as simple as possible!
If you don’t want to use seitan you can replace it with chickpeas, tofu, tempeh there are many options! I used a pre-made seitan for convenience but you can make a homemade seitan if you like. Just prepare it according to package directions and then add it to the soup. Due to the orzo and seitan a lot of the broth gets sucked up so feel free to add more water to your desired amount.

INGREDIENTS
2 cups (480ml) low sodium vegetable broth
2 cups (480ml) water
4 small lemons, juiced*
4 cloves garlic, roughly chopped
1 tablespoon olive oil
¾ cup (168g) orzo
8 ounces seitan
Salt and pepper to taste
METHOD
- In a large pot saute the garlic in oil for 2 to 3 minutes over medium heat.
- Pour in the water, vegetable broth and lemon juice. Bring to a boil over high heat.
- Once boiling pour in the orzo. Reduce to medium high heat and boil for 15 minutes until orzo is cooked.
- Prepare seitan according to package directions. Usually, sauteeing in a pan for a few minutes to lightly brown.
- Once the seitan is done and orzo is soft add it to the pot.
- Add salt and pepper to taste and if necessary more water.
- Serve with fresh parsley, lemon slices and black pepper.
Serves 4
*theres has been mixed feedback, some are saying this is too lemony others saying it’s just right. if your lemons are bigger start with the juice of 2 lemons and adjust from there. If you prefer things to be less lemony also start with the juice of 1-2 lemons and then go from there.
