Instead of tomatoes like traditional Caprese this version uses strawberries! It brings something extra and sweet to this side dish.
I have been seeing this idea floating around Pinterest and the internet so I knew I had to give it a try. I mean it’s vegan cheese, strawberries, and balsamic glaze what could be wrong there. It is all the things I love. The sweetness of the strawberries works so well with the saltiness of the vegan mozzarella. Don’t knock this vegan strawberry caprese until you try it.
Let’s Talk Vegan Mozzarella
Here’s the thing there’s really only one brand I trust for using when it comes to a vegan caprese and that is Miyokos. Their vegan mozzarella is the best I have ever found. It is a bit pricey but I promise in a situation like this where you want to eat the vegan mozzarella cold and it doesn’t get better than theirs. Another great option is the Follow Your Heart vegan mozzarella. Theirs is good but not my favorite. You can use a homemade recipe if you have one. Just make sure to use something you like for this vegan strawberry caprese.
Balsamic Glaze
I feel like most people know what balsamic glaze is but in case you don’t here’s the deal. It is a thick, reduced down, extra sweet version of balsamic vinegar. You can make it yourself very easily if you can’t find it in a store but you should be able to. This works really well with the strawberries and honestly, works well with everything in general, I love balsamic glaze. There are more expensive ones out there that are so delicious but the Trader Joe’s one is also great!
Why Strawberries?
Well really why not? We enjoy fruit and cheese together all the time! In a traditional Caprese the tomatoes do naturally have sweetness as well so while the strawberries are a bit different they are somewhat similar. They are also a bit acidic just like tomatoes. I promise it works so well together and if you wanted to you can serve this over a bed of spinach to make it more of a big salad. I think this is so fun and perfect for summer.

Vegan Strawberry Caprese
Ingredients
- 1 8 ounce block vegan mozzarella, cubed
- 10-13 large strawberries quartered (around 275g)
- 7 basil leaves chiffonade
- 1 tablespoon light olive oil
- 1 tablespoon balsamic glaze
- Generous pinch flaky salt
Instructions
- In a large bowl combine all ingredients.
- Mix until well incorporated.
- To serve garnish with extra basil, balsamic glaze and sea salt if desired.
