this vegan high protein apple pie yogurt bowl is the perfect fall breakfast or dessert! it is filled with the flavors of an apple pie and packs in 24 grams of protein.

the inspiration
Of course once that air starts getting a little crisp I want all the fall things. For me fall makes me want apples, sorry pumpkins. Last year I made a Vegan Apple Crumble Cheesecake and while it is incredible, of course you can’t eat it everyday. So, it got me thinking about how to make a protein dessert that was similiar.
Now, here we are! With this apple pie yogurt bowl that has cooked apples, a delicious vegan vanilla yogurt layer, and a protein crumbly topping. It is easy to make, great for meal prep, and perfect for enjoying fall flavors.
So, now we can have something yummy for dessert while still helping us hit protein goals. Of course even if you don’t care about how much protein you eat this is still delicious.

the ingredients
- Apple: of course we need apples for our high protein apple pie yogurt bowl! You can use any apple you like. I was loving Sugar Bee apples but sadly I cannot find them anymore. So, I opted for Honeycrisp apples.
- Agave or Maple Syrup: I like to add a little agave into the apples. It enhances overall sweetness. You can skip this if you like.
- Vegan Butter: we only need a little bit for cooking the apples. If you want to skip this you can but I like how it helps to cook the apples.
- Ground Nutmeg: we will add in a bit of ground nutmeg for flavor. I do not like to add in too much otherwise it becomes overpowering.
- Ground Cinnamon: I like to add more cinnamon than nutmeg because I enjoy the flavor more. The cinnamon instantly makes it feel like fall for me!
- Vanilla Extract: I like adding a little into the apples to enhance the overall flavor.
- Hemp Seeds: we will add some hemp seeds to make the crumble/crisp topping. Hemp seeds are a great source of plant-based protein.
- Catalina Crunch: this adds sweetness and flavor to our crumble/crisp topping! Catalina Crunch is a brand that makes protein cereal. If you can’t find it you can always substitute with vegan-friendly graham crackers or another protein cereal.
- Vegan Yogurt: you can use any vegan yogurt that you like. I do prefer to use something sweetened and vanilla flavored for this. Either the Silk Vanilla Soy Milk Yogurt or Icelandic Provisions Vanilla Oat Milk Skyr. If you don’t mind a bit of tang use a vegan plain Greek yogurt like Forager’s or Kite Hill.
- Vegan Vanilla Protein Powder: again you can use any vegan protein powder you like. I tried out the one from Kos for this and it was pretty good!
- Extra Firm Tofu: we will add this into the vegan yogurt and protein powder mix to add in extra protein. If you would like to use silken or firm tofu you can as well.
- Nutritional Yeast: this is optional but I like to add it in for extra protein and vitamins.

- Finely chop up one apple. You can use any apple you like, I used a Honeycrisp. You can choose whether you want to peel or not. I personally do not mind the skin.

- Place the apples into a small pan. Add in some vegan butter, ground cinnamon, ground nutmeg, vanilla extract, and agave.

- Cook the apples for 20 to 30 minutes over medium heat. You can add 1 to 2 tablespoons of water if needed during the cooking process.

- Prepare the crumble/crisp topping by adding the Catalina Crunch and hemp seeds into a blender. You only need to pulse for a few seconds to make the crumbly topping. Pour into a small bowl.

- Finally, blend the tofu, vegan yogurt, powder, and nutritional yeast until smooth.

Now once you have made all the components for the apple pie yogurt bowl ready it is time to make it! Obviously, for my pictures I did actually decide to go with a large jar but it can also go in a bowl. Any vessel you want to put it in will work great here.

- I like to place the apples on the bottom of the jar. However, if you are doing a bowl you can either place them on top of the yogurt or in the bottom of the bowl.

- Then, cover it with the vegan yogurt mixture.

- Finally, top it with the crumble/crisp topping. I also added a sprinkle of ground cinnamon.

- Chill in the fridge for 2 hours before enjoying to allow the vegan yogurt to thicken.
Is this recipe good for meal prep?
It definitely is! You can make everything ahead of time and then just layer it in a jar or container. You can also make all the components, store them separately, and then assemble your bowl when you are ready to eat.

This recipe is so delicious as it. It is the perfect snack or breakfast for fall. However, there are some things that I think could make great additions or variations to this recipe.
- Add nuts like walnuts, almonds, or pecans to the crumble/crisp topping.
- Add your favorite granola to the crumble/crisp topping.
- Add chia seeds to the vegan yogurt mixture to make it more of a chia pudding.
- Drizzle peanut butter (or any nut butter) overtop. You can also mix this into the vegan yogurt as well.
- Swap the fruit depending on the season. Of course apples can really be used throughout the whole year but you can always use blueberries or strawberries in the summer.

You will love this high protein breakfast so much. It is easy to make, comes together quickly, and tastes so delicious. There are plenty of ways to to make this recipe your own and play around with changing it to your preference.

If you want the apples to be warm I would suggest either cooking them right before eating or storing them separately so you can easily warm them.

Apples
- ½ teaspoon vegan butter
- 1 medium-sized apple finely chopped, around 6.5 ounces
- ⅛ teaspoon ground nutmeg
- ¼ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ½ tablespoon agave or maple syrup
Vegan Yogurt
- ½ cup vegan vanila yogurt
- ⅓ cup extra firm tofu
- Scant 1 tablespoon vegan vanilla protein powder
- ½ tablespoon nutritional yeast
Crumble Topping
- 1 tablespoon + 1 teaspoon Catalina Crunch
- 1 tablespoon hemp seeds
Instructions
- Finely chop one apple of your choice (I used Honeycrisp). Peeling is optional. I like to keep the skin on.
- Place the apple pieces in a small pan. Add vegan butter, ground cinnamon, ground nutmeg, vanilla extract, and agave.
- Cook over medium heat for 20–30 minutes, stirring occasionally. If the pan gets too dry, add 1–2 tablespoons of water.
- For the crumble topping, pulse Catalina Crunch and hemp seeds in a blender for just a few seconds until crumbly. Transfer to a small bowl.
- In a blender, mix tofu, vegan yogurt, protein powder, and nutritional yeast until smooth and creamy.
- To assemble: if using jars, layer the apples on the bottom, then cover with the yogurt mixture, and finish with the crumble topping. For bowls, layer however you like. Sprinkle with a little extra cinnamon if desired.
- Chill in the fridge for at least 2 hours to let the yogurt mixture set before serving.
