this edamame milk is easy to make, delicious, and a beautiful light green color! you can enjoy it unsweetened or sweetened. perfect for anywhere you want to use a homemade non-dairy milk.

the inspiration
To get to the edamame milk inspiration we need a bit of a backstory. My favorite non-dairy milk is actually pea protein based (if you’ve been around the blog you’ll know that). So, my first thought was to make pea protein milk. However, the process while not hard felt a bit more complicated to me.
So, then I was thinking about soy milk. However, I have also heard that soy milk can be a bit hard to make as well. Finally, after all this thinking and contemplating I thought about edamame.
Edamame are of course soybeans, easy to find, and I had a feeling it just might work to turn them into a delicious edamame milk. Worse came to worse it just wouldn’t be that great. So, I followed the same process for making oat milk or almond milk and it came out great!

the ingredients
- Shelled Unsalted Edamame: You can find frozen shelled edamame in the freezer section of most food stores. It is important to grab an unsalted one so the edamame milk doesn’t have a salty flavor. You may need to look in different freezer sections it could be with vegetables or it could be in a different section. You can also use a fresh unsalted edamame if your food store has that.
- Water: we will need water to blend up the edamame and turn it into a “milk”.
- Agave: if you decide you want to make the sweetened vanilla version you will need some sort of sweetner. I prefer agave but you can always use maple syrup or a date.
- Vanilla Extract: to add in some extra flavor the vanilla extract works well here to make a vanilla edamame milk.

WHAT ARE EDAMAME?
Edamame are soybeans just in a different stage of maturation compared to white soybeans. They are basically baby soybeans!

The process for making the edamame milk is very simple. First, you will boil the edamame for 30 minutes. Once they are soft you will transfer them into a blender. Then, pour in 5 cups of water.
You may notice some of the edamame skins floating in the water I do like to remove those. Then, you will blend for 1 minute. So easy!

Grab a large bowl and a sieve. Pour the blended mixture into there and you will be left with some edamame pulp. I personally did discard this but if you would like to save it to try and use for something else you can. Then, you will clean the sieve and repeat the process of straining the edamame milk.
Finally, I will then take a piece of cheesecloth and lay it over the sieve. We will do one last straining and you are done! Now, you’ve made edamame milk.
At this point you are left with unsweetened and unflavored edamame milk. So, you can either leave it that way or you can flavor it.

what does edamame milk taste like?
I find the flavor to be rather mild. When you drink it alone you will notice a slight beany taste. But overall it is smooth, creamy, and mild.
The light green color is so gorgeous and I think it would be so fun to use it in a tea latte. The sweetened vanilla is actually so delicious I couldn’t believe it.
So, it really is a fun recipe to play around with! Edamame are pretty mild in flavor and while it isn’t the typical non-dairy milk ingredient it is a fun one!

how to use edamame milk
Once you have made the edamame milk you can use it anyway you like! Anywhere you would like to use non-dairy milk it first in perfectly. Of course the sweetened vanilla is better for baking or coffee etc. I also used it to make a ninja creami, it was so good!
I think the unsweetened edamame milk would be great for enjoying with cereal, pasta, sauces, and wherever else you want!

Homemade Edamame Milk
Equipment
- Large Blender *at least 6 cup capacity
Ingredients
Unsweetened Edamame Milk
- 1 ½ cups frozen edamame unsalted and shelled
- 5 cups water
Sweetened Vanilla Edamame Milk
- 3 cups prepared unsweetened edamame milk
- 1 ½ tablespoons agave or other sweetener
- 1 teaspoon vanilla extract
Instructions
- Boil the edamame for 30 minutes. Discard the water.
- Add the edamame into a blender with 5 cups of water. Some of the skin from the edamame may come off, if you find it floating in the water use a slotted spoon to scoop it out and remove it. Blend on high for 1 minute.
- Start to strain the edamame milk by pouring it through a fine mesh sieve twice. Then for the third round use a piece of cheesecloth.
- Pour into a container or jar and keep it in the fridge.
- To make vanilla edamame milk mix all the ingredients together, pour into a container or jar, and store in the fridge.

- I used frozen edamame, if you can only find already cooked edamame that will work too.
- Makes approx 5 cups (1185ml) of edamame milk.
