Crispy tofu skewers are coated in a sweet, nutty peanut sauce. The skewers are paired with Lotus Foods’ Organic Traditional Pho Rice Noodles in a spicy sauce and cucumbers for a delicious summer dish.

I am very excited to be collaborating with Lotus Foods once again to bring you some scrumptious recipes. As many of you know I am a big fan of Lotus Foods. Lotus Foods has a wide variety of organic rice and rice-based products like rice ramen noodle soup cups, rice ramen noodles, rice crackers, and pad Thai rice noodles. They recently expanded their range of organic rice noodles to include Organic Traditional Pho Rice Noodles, Organic Brown Udon Rice Noodles, and Organic Buckwheat & Brown Soba Rice Noodles. I used the Organic Traditional Pho Rice Noodles in this recipe. They are vegan, gluten-free, non-gmo, organic, and kosher. Pho is a thin noodle that is typically used in Vietnamese and Chinese cuisine. These noodles are made with organic white rice and ready in 4 minutes. You actually don’t even cook them – just soak them in boiling water and then they are ready to use. They really couldn’t be any easier to make and use.

Now, let’s discuss this amazing recipe. Tofu skewers are one of my favorite things to make because they are easy, quick, and satisfying. While the skewers cook you are going to prepare the spicy noodles and cucumbers making this perfect for a weeknight dinner, or even meal prep if you like.

Tips for Skewers

There are a few things you can do to help ensure your tofu skewers come out better. First off, soak wooden skewers in water about 3 hours prior to using them. This will help them not to burn or dry out. Second, do not cut your tofu too thin. For this recipe, I decided to make long skinny rectangles but if your tofu is too thin you risk it burning and also it can be harder to skewer. Third, be patient when you are pushing the tofu onto the skewer. This recipe does use super-firm tofu which is a much denser tofu but if you try and push it on too fast you could still risk it breaking down the middle which is a result we definitely don’t want.

Baking Skewers

Now, I know when most people think skewers it means grilling but you can bake skewers and I have to say I almost like it better. You don’t have to think about it, or carefully watch it. Just pop it in the oven and move on with the recipe. The tofu still comes out crispy and flavorful without the hassle of grilling. If you want to grill your tofu, I always suggest using a smaller electric grill because grilling tofu on a large gas or charcoal grill can be a bit tricky. But just trust me when I say the oven way was so easy!

FAQ’s

Can this be made peanut free? If you have a peanut allergy but aren’t allergic to other nuts like almonds or cashews you can use almond or cashew butter. If you are allergic to all nuts, you can use tahini or sunflower seed butter.
Can this be made gluten free? The dish is gluten free aside from the soy sauce so just swap it out for coconut aminos.
Can I replace the tofu? If you have a soy allergy or don’t like tofu you can use cauliflower, I think that would be really delicious here. Replace the soy sauce with tamari or coconut aminos.
Do I have to use skewers? If you don’t have skewers or can’t find them you can just bake it on the sheet pan, but I love the skewers for presentation and ease of cooking.
