this sheet pan vegan sausage & apple dinner is the ultimate fall weeknight meal. it is easy to make, comes together in less than an hour, and has so much flavor.

the inspiration
I love a sheet pan meal. It is so great for dinner because they are easy to make, can pack in lots of great plant protein and veggies, and it makes a complete meal super fast.
It has been a few years since I have shared a sheet pan meal so I knew it was time to share a new one. With this recipe we are ready to take on fall with lots of cozy flavors and produce.
I have actually been thinking about doing a vegan sausage & apple meal for a few years but now we have finally gotten around to it. The flavors work so well together and I think you will love it.

the ingredients
- Apple: you can use any apple you want. I went with Honeycrisp and kept the peel on.
- Brussels Sprouts: I love Brussels sprouts all year round but for me they are definitely fall and winter veggies.
- Vegan Sausage: you can use any vegan sausage you like, I went with Field Roast. We will discuss it more below.
- Rosemary: the rosemary adds in such nice flavor. It is so delicious.
- Sage: the sage also adds in nice seasona flavor.
- Sweet Potato: sweet potatoes always scream fall to me and I knew they would work so well with the apples.
- Shallot: the shallots add a nice sweetness to the dish.
- Seasonings: you will need a few seasonings. We have ground cinnamon, ground nutmeg, garlic powder, onion powder, and salt.
- Olive Oil: we need oil for roasting the vegetables. I always opt for light olive oil, use what you like.

For the vegan sausage I do really love Field Roast. The apple sage sausage has such great flavor that works perfectly for this dish. There are other vegan sausages on the market as well like Beyond Meat that can work great here too.
You can also make your own homemade vegan sausage with seitan. You can add in additional seasonings and flavors that you like to make it better suited for this dish.
prepping the ingredients

- Prepare the apples and sweet potatoes. Cut the apples into wedges and the sweet potatoes into rounds. They will be tossed with olive oil, ground cinnamon, and ground nutmeg.

- Prepare the shallots and Brussels sprouts. Thinly slice the Brussels sprouts and shallots. Coat in oil, garlic powder, onion powder, and salt.

- Cut the vegan sausage quarters on a bias.

- Lay everything out on the sheet pan. I like to keep the sweet and savory elements separate. Top with fresh rosemary and sage.

When it is time to bake the sheet pan meal it will happen very quickly! You only need 25 to 30 minutes depending on your oven. You want the sweet potatoes and Brussels sprouts to be soft.
The vegan sausage should be nice and crispy. The sage and rosemary will also get crispy. I like using the sage on top of the final dish as it has nice flavor.

You can then serve the dish immediately. It is delicious all on its own but you can also pair it with a sauce. I think a vegan “honey” mustard would be great on here. You can also pair it with a vegan yogurt sauce for a nice creamy texture.
I decided to put it over some rice. You can also use quinoa, brown rice, farro, couscous. Any type of grain that you like. It is delicious with it.
Something else that i do think would go great with this meal is some cooked lentils or chickpeas. You can place it all in a bowl together.

It is nut free. It may have gluten or soy depending on the vegan sausage that you use. If you want to make it gluten free you can always substitute the vegan sausage for tofu with some seasonings like garlic powder, onion powder, paprika, and salt.

Sheet Pan Vegan Sausage & Apple Dinner
Ingredients
- 4 vegan sausages of choice, I used Field Roast Apple Sage
- 1 sweet potato
- 2 apples of choice, I used Honeycrisp
- 5 to 7 Brussels sprouts
- 1 shallot
- 1 tablespoon olive oil divided
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Fresh rosemary and sage
Instructions
- Preheat the oven to 425°F (218°C).
- Prepare the produce: Cut the apple into wedges. Slice the sweet potato into ½-inch rounds. Trim the ends of the Brussels sprouts, then cut them crosswise into 4 thin slices. Peel the shallot, then slice it thinly crosswise. Place the apple wedges and sweet potato slices in one bowl, and the Brussels sprouts and shallot in another.
- Cut the vegan sausages into quarters on a bias. You can also slice them into rounds or leave them whole, depending on your preference.
- To the bowl with apples and sweet potatoes, add ½ tablespoon (7 ml) olive oil, plus the cinnamon and nutmeg. Toss well to coat.
- To the bowl with Brussels sprouts and shallot, add the remaining ½ tablespoon olive oil, along with the garlic powder, onion powder, and salt. Toss to coat.
- Spread everything evenly on a large lined baking sheet. Top with a few sprigs of fresh rosemary and pieces of fresh sage.
- Bake for 25–30 minutes, or until the vegetables are tender.
- Serve warm with rice, quinoa, or another grain. You can also simply enjoy on its own.

This looks really tasty – it’s great to see apples in a savoury recipe! Just one thing… 4 sausages doesn’t divide very nicely between 3 servings 😁😂
Cut each of the four sausages into three even pieces. Twelve pieces total.
Then each of the three servings will have four pieces of sausage.
I am about to make this for the 4th time! It is so cozy and satifying this time of year. I serve it with farro.
