If you are looking for an extra way to get some veggies in then you need to try these veggie filled nachos. Not only are they delicious but they are easy to make and perfect for lunch or dinner! I also love this idea for kids and families.
A few weeks ago for lunch I really wanted nachos but I wanted them to be a bit healthier. So, I decided to use some leftover zucchini and broccoli in addition to chips as a base! I was so pleased with the result and they were so delicious I just had to share them with you all. I wanted to give you 2 recipes that are filled with veggies and can help you to get more vegetables in. Single Serving Meals
I kind of hate determining serving sizes because honestly everyone likes to eat different amounts. I personally eat all of this as 1 meal for me but you can split this into 2 if you like it was definitely a lot of food. You can also double or triple the recipe for families! Either way they are delicious and so easy to make. You can also enjoy these a snack or appetizer.
Why Broccoli and Zucchini?
Honestly, why not? I just had some laying around it is a great way to enjoy these veggies and they are pretty tasteless so they work well with topping and lots of flavor. But feel free to add any veggies you enjoy to this. You can definitely add in beans as well! I was just feeling lazy and didn’t want to open a can of black beans.
Vegan Cheese Sauce
I like to mix the cashew fiesta dip because it makes my life easier but you can make a homemade one if you desire. I have a recipe on the blog that you can check out! Just simply mix it with a little nondairy milk and then it will be perfect for drizzling.
FAQs
- What chips do I use? I love these ones from Ground Up they are cauliflower chips and they are so good, another great way to get in a veggie!
- Can I make these gluten free? Of course just don’t use seitan, you can use tofu or black beans.
- What are some other good nacho toppings? Hot sauce, onions, avocado!

Veggie Filled Nachos
Ingredients
- 1 yellow zucchini sliced (about 9 ounces/260g)
- 1 cup frozen or fresh broccoli florets (about 3.2 ounces/90g)
- About 10 tortilla chips (28g)
- ½ bell pepper (about 3 ounces/90g), chopped
- ⅔ cup frozen corn (3 ounces/85g)
- ⅛ cup vegan cheese shreds (14g)
- 2.5 ounces vegan chorizo (70g)
⅓ beefsteak tomato (about 3.5 ounces/100g), chopped
- ⅓ cup lettuce (about .5 ounces/20g), shredded
- 2 tablespoons cashew fiesta dip (30g)
- 3 tablespoons nondairy milk (45ml)
- 1 tablespoon vegan sour cream
- Spray oil
- Tajin
Instructions
- Preheat oven to 375F (190°C).
- On a parchment lined baking sheet layer the zucchini, broccoli, and chips for the base. Spray with oil and shake Tajin on top if desired. Top with the seitan chorizo, corn, vegan cheese, and bell pepper.
- Bake for 15 minutes until warm.
- In a small bowl combine the cashew fiesta dip with nondairy milk. Microwave for 30 to 40 seconds until warmed through. Mix with spoon to combine.
- Once the nachos are done top with the lettuce, tomatoes, jalapeño, vegan sour cream, and vegan cheese sauce.

- I like to use the Tofutti vegan sour cream.
- I like to thin it out with about 1 tablespoon of water.
