the inspiration
Making drinks and mocktails is so much fun. I especially love making them themed for the holidays and Christmas. Last year I made a Pomegranate and Orange Mocktail and it was just delicious.
However, this year I wanted to do something different and go for a very snowy theme. The idea of the coconut being used for the drink and then coconut flakes on top was just so pretty to me.
So, if you are looking for more of a creamy drink and you love coconut then this is it.

the ingredients
- Canned Coconut Milk: for this recipe you need canned coconut milk. You can either use full fat or light coconut milk, either way will work. Just please make sure it is canned.
- Maple Syrup: I like to use maple syrup for sweetness. You can use agave, coconut nectar, or any other sweetener you like.
- Ground Cinnamon: the cinnamon adds a nice seasonal touch and flavor.
- Vanilla Seltzer: I like to add seltzer to add fizz. It also helps to thin out the coconut milk a bit. Vanilla seltzer is very delicious and adds in nice flavor. However, you can use any seltzer flavor you enjoy.
- Shredded Coconut Flakes: you can use sweetened or unsweetened. However, you want shredded coconut to sprinkle on top. It looks so pretty and like snow!
- Cranberries: I like to keep cranberries in my fridge around the holiday season, they are such a great garnish.
- Rosemary: similar to the cranberries, the rosemary makes such a great little garnish.

- Shake the canned coconut milk before opening. There can be a separation of the solid and liquids so giving a nice hard shake helps a lot.

- In a jar or a shaker combine the coconut milk, maple syrup, and ground cinnamon. Shake until well incorporated. Taste it, and add in more maple syrup or cinnamon to your preference.

- Add the drink into a glass with ice.

- Top off with vanilla seltzer.

- Cover the top of the drink with the shredded coconut. Then, put in a sprig of rosemary and a few cranberries.

- Enjoy you drink.
how to turn this drink into a cocktail
If you want to turn this drink into a cocktail it is super easy and I have a few ideas:
- Add in a coconut rum. While rum reminds me of college days, I do think a coconut rum would be great in here. It will compliment the drink very well.
- Make it a margarita. Add in some tequila and triple sec. You can even add in some lime juice it will brighten up the drink.
- Add in some vodka. You can always add in a little vodka, if you want you can use a flavored one as well.

Is this recipe allergy friendly?
Yes, it is nut, soy, and gluten free. It does contain coconut.
What else can I add to this?
While the drink is yummy as is, you can add in a few fun things. Vanilla extract will add in nice flavor. You can also play around with some citrus like lime juice or a lime wedge. If you want to incorporate another seasonal spice you can do some ground nutmeg.
