this cucumber mint lime refresher is the best summer drink. it has so much amazing flavor and is the perfect thirst quencher for hot days.

the inspiration
Online there is something going around called Nature’s Gatorade. Essentially, it is a healthier version of Gatorade since it is made from more wholesome ingredients, no dyes, little sugar etc.
So, I really wanted to try making my own flavors because it just sounded so refreshing and delicious. Many people were doing a blueberry flavor which looked delicious but something about the cucumber lime mint combination just sounded so good.
This cucumber mint lime refresh truly is perfect for these hot summer days coming up.

the ingredients
- Coconut Water: coconut water is a great source of natural electrolytes (the thing Gatorade replenishes). It is a good source of potassium, manganese, and sodium. Making it a great base for replenishing. Feel free to use any brand you like.
- Cucumber: I prefer English cucumbers in general so that is what I use. Cucumbers are also mostly water so they are great for hydrating.
- Lime: the lime adds in nice flavor as well as being a great source of vitamin C and antioxidants.
- Mint: I find mint so refreshing in water and drinks so I love the flavor it gives here.
- Agave: to help balance the flavors out a bit. It actually doesn’t make the cucumber mint lime refresher sweet at all because we aren’t using very much.
- Himalayan Pink Sea Salt: if you have noticed when you drink Gatorade it has a bit of saltiness to it. That is because the salt helps to put electrolytes back into our body as well. You want to use a Himalayan pink sea salt as it contains the minerals we need, table salt will not work here.

To make this drink is so easy! All you need is a blender and a strainer. Start by adding all the ingredients into your blender.
Then, blend the drink for a minute until everything is broken down. I personally like to use a high speed blender to ensure it can handle the ingredients. Also, I do not peel the cucumbers but you can if you like.
Once the drink is all blended up it will be time to strain. However, if you don’t mind there being texture you can skip straining it if you like as well.

To strain the drink I find it best to use a sieve because the holes are so small it will really help to strain any pulp put.
Place the sieve over a measuring cup, small pitcher, or bowl. I like it over a measuring cup so it makes it easier to pour into a cup. Then, pour the drink out over into the sieve.
You may need to take a spoon and move the pulp around a bit to help make room for the liquid. I like also press the spoon down to help squeeze the liquid out a bit.

You will get about 2 cups of the drink so I say that this makes 2 servings (1 cup per serving). I like to get a big glass and put in a ton of ice to make the cucumber mine lime refresher really cold.
Then, just pour your drink over. I like to add a few pieces of mint on top. If you want to get fancy you can add a slice of lime and cucumber to the rim of the glass too!
I just love the color of this drink it is so vibrant and beautiful.
why you’ll love this drink
I really loved the flavor of this drink. It almost reminds me a bit of a margarita or mojito probably because of the lime juice and the salt. The drink really is so refreshing. I was enjoying taking a few sips every morning because it was so cold and had great flavor.
Something else I really love is all the added benefits of the drink. So, instead of grabbing a cocktail or a mocktail that will maybe have a lot of sugar or juice in it this is just light and delicious.

- Can I make the drink sweeter? Of course! It really isn’t sweet at all but the flavor is nice. So, if you feel like you want it sweeter just add in the agave until it is as sweet as you like.

Cucumber Mint Lime Refresher
Ingredients
- 3 limes juiced (limes weight before juicing around 8.5 ounces)
- ½ English cucumber 6.5 ounces
- 1 cup coconut water
- 4 mint leaves plus more for garnish if desired
- ¼ teaspoon Himalayan pink sea salt
- 2 teaspoons agave
Instructions
- Add all the ingredients into a blender and blend on high for 1 minute.
- Use a sieve to strain the liquid into a measuring cup or small pitcher.
- Fill a glass with ice and pour as much of the desired drink into the glass. Garnish with mint if you like.
